when painting how do you know what detail to put in? especially details

I usually finish my painting in 2 to 3 hrs but professionals take several more, how do pros know what to put in when it comes to details?, my paintings end up too simplified

I know reference is the answer but it doesn’t seem to be enough as I see others with way more interesting stuff that they put in their work
